The sourness jumps out right away with notes of sour candy gummy worms and a boozy fortified flavour that resembles a good tawny port. The magic of Tres Dragones from Finca Potosi lives through multiple extended fermentations of their hearty Colombian varietal. It is remarkable how much flavour they can soak up into the seed. Drink it black — the acidity is perfect served cold over ice.
